My family has always lived on the farm in the Jansernstrasse in Sattel. My siblings Franz and Renate still live with our mother Agata in the same house we grew up in. I love my job. I like working in the fresh air, being together with the animals, nature – everything. I would never want to change.
While in summer I spend a lot of time outside, in winter you can usually find me in my own distillery. There I distil our famous schnapps. Every year this is about 1000 litres of 50% alcohol for my own sale and then a lot more, because the farmers in the region also bring their fruits to the distillery. The latter was bought by my father in 1954. It has a capacity of 170 litres and is not a steam distillery, as is usual today. My “Häfelibrand” distils twice, so there is a raw brandy and a fine brandy, according to the old pattern. Because I store the fruits for several months in the 200-litre barrels and only burn them in December, I don’t have to use any additional yeast thanks to this natural fermentation. For one litre of cherry (60% alcohol) I need about 10 kilos of cherries. The yield of pears is somewhat lower: For 8 litres of brandy (50% alcohol) 100 kilos of pears are needed. In addition to schnapps/brandy (cherry, herbs, plums, prunes, pomaceous fruit, Theilers pear, Williams pear) you can also buy fresh milk, eggs and apple juice from our own press (Oct.-Nov.).
For the future I hope that the farm will remain in family hands and that the whole bureaucracy will not take up more time for me, because it is sometimes quite difficult to get along with the computer and always have to record everything meticulously.
